Reuben Baked Potatoes
4 Lg.Baking Potatoes 2 Tbsp.Gr Onion, minced
2 CupsCorned Beef/shredded 2 Tbsp.Garlic, minced
1 CupSauerkraut/chopped 1/4 CupHorseradish
1 CupSwiss cheese, shredd 2 Tsp. ePaprika/Caraway seed
Preheat oven to 425*F. Bake potatoes 45 min. (until tender) & cool. Cut potatoes in half - scoop out flesh, leave skins intact & save both. Dice corned beef & place in bowl. Add sauerkraut & mix in Swiss cheese. Add green onions, garlic, horseradish sauce & caraway seeds.
In another bowl, mash potatoe with cream cheese. Stir into the corned beef mixture. Mound the filling in the potatoe kins, top with Parmesan and sprinkle with paprika.
Bake at 375*F for 30-40 min, or until heated through. Serve immediately, 4-8 servings.
