Spanakopita
3 10 oz. fr.Spinach, chopped 5 Med.Eggs, beaten
2 CupsOnion, chopped 1/2 CupBread Crumbs
1/4 lb.Feta Cheese 3 SticksButter, melted
1 lb.Cottage Cheese 1 lb.Phyllo Pastry
Thaw spinach, remove moisture. Saute onions in oil 5 min. Add spinach, simmer over low heat until moisture evaporates. Blend cheeses. Add beaten egg - mix well. Toss bread crumbs, parsley and dill into spinach - blend with cheese mixture.
Heat oven to 375*. Unroll 1 phyllo sheet and cut into 3 pieces (thin thirds lengthwise). One piece at a time brush with melted butter. Place 1 tsp. filling at the bottom of the long strip. Fold the short side over diagonally to form a triangle to enclose filling.
Repeat diagonal folds - flag fold fashion to create a neat triangular pkg. Place triangles on ungreased baking sht. Brush with butter. Bake 20 min or until golden brown. Cool for 75 servings.
