Swedish Meatballs
2 SlicesWhite bread 1 Med.Egg
1/4 CupMilk 2 CupsBeef Stock
1 1/2 lb.Ground Beef & Pork 2 Tbsp.Flour
1 Sm.Red Onion, chopped 1/4 CupHeavy Cream
In small bowl, soak bread in milk until soft. In lg. bowl, combine all meatball ingredients (except butter & oil). Add soaked bread. Hand mix thoroughly until smooth. Shape into golf ball size meatballs (dip hands in cold water to avoid sticking).
Heat butter & oil in large skillet over medium-high heat. Add meatballs 8-10 at a time & gently brown on all sides (5-7 min). Shake skillet occasionally to maintain shape & brown evenly. Warm in oven.
Gravy: Deglaze skillet. Simmer 1c. stock 5 min. - scrape bottom of skillet with spatula. Strain gravy into saucepan - add remaining 1c. stock. In small bowl, mix flour & 1/4 c. cold water until smooth. Whisk flour mixture into warm gravy. Simmer, whisk to prevent lumps until thickened (3-5 min). Add cream. Serve with parsley.
