Cut avocados in half lengthwise. Mash the pulp coarsely in a non-reactive (glass or stainless steel) bowl and add remaining ingredients.
* Haas avocados are recommended. They have a dark green pebbly skin and are richer and have a more buttery flavor. Reserve one avocado pit and store with the guacamole to prevent the mixture from turning brown.
