1 9¨Pastry Shell* 1 Cup eaLt Cream/Milk
8 SlicesBacon 1 Tbsp.Flour
1 Med.Onion, sliced Swiss Cheese
4 Med.Eggs, beaten To tasteSalt & Pepper
In a skillet cook bacon until crisp. Drain & reserve 2 Tbsp of drippings. Crumble bacon & set aside. Cook onion in reserved drippings until tender; drain. In bowl thoroughly stir together the eggs, cream, milk, flour, salt & nutmeg.
Stir in the bacon, onion & cheese; mix well. Pour into warm pastry shell *pre-cooked with dried beans for thin crust. If necessary cover pastry edge with foil to avoid overbrowning. Bake at 325* for 45 - 50 min. or until set in center.
Variations: Broccoli & cheddar, replace bacon with cup of sauteed mushrooms & blanched broccoli. Replace swiss cheese with cheddar cheese. Spinach & sausage, replace bacon with 1 cup cooked & crumbled sausage & 1 pkg. frozen spinach souffle, thawed.
