Grilled Vegetables
4 Sm.Zuccini 1 Tbsp.Black Olives/Orange
2 Med.Eggs, hard boiled 4 8 oz.Yams, peel & wedge
2 Med. ea.Red Peppers, quarter 2 Tsp.Fresh Rosemary
2 Tbsp.Olive Oil/Lemon juic 2 Med.Sun-dried Tomatoes
Spray med-low heated grill with oil spray. Spray vegetables on all sides - sprinkle with salt & pepper. Grill vegetables until tender, turning often (about 10 min for zuccini, 12 min for peppers & 30 min for yams).
Mix orange peel & rosemary in sm bowl. Whisk lemon juice, olive oil, black olives & sun-dried tomatoes in lg bowl. Salt & pepper to taste. Add vegetables to dressing; toss to coat. Serve with sprinkled mixture & an egg half per each serving.
