Fried Okra, Tomatoes & Corn
2 CupsOkra, bite size piec 1½ CupCorn Meal
2 CupsVegetable Oil
2 CupsCorn Kernels
1 CupTomato, chopped To tasteSalt & Pepper
Slice Okra, bite size pieces (about 1/2¨), into bowl of water. Drain well on paper towels. Dredge with corn meal (salt & pepper added to taste) & fry in saucepan filled oil, on high heat, until crispy - stir occasionally to cook evenly.
Serve with tomatoe & corn salad to accompany your favorite chicken or fish entree.
