Brussel Sprouts with Pancetta
1 lb.Brussel Sprouts 2 ClovesGarlic, crushed
3 oz.Pancetta
2 Tbsp.Olive Oil
2 Tbsp.Butter To tasteSalt & Pepper
Preheat oven to 400*F. Combine butter & oil in lg oven proof skillet over medium heat. Stir continuously to avoid burning. Add pancetta. Cook until it begins to crisp (about 3 min).
Add brussel sprouts to mixture & cook until they begin to brown (about 5 min). Season with salt & pepper.
Transfer pan to oven & roast until brussel sprouts are golden on all sides (15-20 min) depending on size. Add garlic & roast for 5 min more.
