Potatoe au Gratin & Spinach
1 lb.Potatoes 1 CupMilk
3 ClovesGarlic, crushed 1 Pkg.Spinach, thawed/chop
3 Tbsp.Green Onions, sliced 1 CupCheddar Cheese
3/4 CupCream 1/4 CupPine Nuts
Peel potatoes - slice thin. Spread in heavy non-stick fry pan. Scatter crushed garlic & sliced onions evenly over potatoes. Pour cream & milk over the potatoes. Place the pan over med. heat & cook for 8 min, or until potatoes are tender.
Drain spinach - add to potatoe mixture, mix lightly. Cover pan - cook for 2 min. Salt & pepper to taste. Spoon into heavy au gratin dish. Sprinkle with grated cheese, pine nuts - toast with prepared grill or broiler for 2-3 min or until topping is golden brown.
Serve with lettuce & tomatoes salad for a hearty but simple meal.
