Orzo & Pignoli Rice Pilaf
1/2 CupOrzo 1 CloveGarlic, minced
3/4 CupBasmati Rice 2 Tbsp.Pignoli (pine nuts)
1/4 Med.Onion, chopped To tasteParmesan, grated
2 Tbsp.Butter/Olive Oil To tasteSalt & Pepper
Melt butter in lg saucepan (med-low heat). Add onion, cook/stir until golden (5 min). Stir in garlic (1 min.) Add rice & orzo. Cook, stir/cook (2 min.) Add 2 cups water, salt to taste,then boil. Stir, cover/cook (med. heat,15 min) until liquid absorbs.
Remove from heat, covered, (10 min) then serve. Toast pignoli in a sm dry skillet over low heat. Stir constantly until golden (about 2 min). Add pignoli to cooked pilaf & toss to blend. Serve immediately, with grated cheese if desired.
