Cast Iron Skillet Corn Bread
2 EarsCorn, husked 1 Tsp.Baking Powder
2 CupsYellow Corn Meal 2 Tsp.Baking Soda & Salt
1¾ CupFlour 3 Med.Eggs
1/2 Cup ea.Sugar & Butter 1 Cup ea.Sour Cream/Milk
Place corn in lg. container, cover with cold water & soak for one hour. Remove corn, drain excess water. Grill corn , or boil, over med. heat. In lg bowl, combine cornmeal, flour, sugar, baking powder, baking soda & salt. Mix well, breaking lumps with whisk.
In a medium bowl whisk together eggs, milk & corn kernels. Add wet mixture to dry mixture. Stir with wooden spoon until just blended.
Pour batter in unwiped skillet, spread evenly. Place skillet over medium heat - cook until golden brown around edges & toohpick inserted in center comes out clean (25-30 min). Cool in skillet at room temperature - serve warm with sour cream.
