Sauteed Wild Mushrooms
1/4 lb. ea.Asst. Wild Mushrooms 1 Tbsp.Parsley, chopped
3 Tbsp. ea.Butter/Olive Oil 4 SlicesToasted Bread
3 ClovesGarlic, chopped 2 oz.Goat Cheese
1 Med.Shallot, chopped 1 Tbsp.Chives, chopped
Heat butter & oil in lg. skillet. Stir in mushrooms. Cook over med. heat, stirring or shaking pan continually, until golden (about 3 min). Add garlic & shallots - cook 2 min more. Season with salt & pepper & toss with parsley.
Arrange 1 pc. of toast in center of each plate. Spoon mushrooms evenly over toast & top with a small dollup of cheese. Sprinkle with chives. Serve immediately.
