Peas with Prosciutto
1 Pkg.Petite Peas, thawed 1 SprigFresh Thyme
1 Sm.Yellow Onion, choppe 3 oz.Prosciutto, chopped
2 Tbsp.Butter & Olive Oil
3 ClovesGarlic, minced To tasteSalt & Pepper
Heat oil in heavy skillet over medium heat. Stir in onion & garlic. Cook until tender (3-4 min). Stir in peas & thyme, season with salt & pepper to taste. Stew until peas are tender (10-12 min if fresh or 1-2 min if frozen).
Add prosciutto & cook, stirring occasionally, for 1-2 min. Stir in butter & 1/2 tsp of hot water. Stir a few seconds. Adjust seasoning to taste & serve.
