Fried Green Tomatoes
3 lbs.Green Tomatoes 1 Tbsp.Rosemary/Oregano, ch
6 StripsBacon, crumbled 2 Med.Eggs
3/4 CupFlour To tasteOlive Oil or Bacon f
1½ CupsCornmeal To tasteSalt & Pepper
Slice tomatoes in 1/2 inch slices. In sm bowl combine flour with 1 tsp salt & pepper. In another sm bowl combine cornmeal and remain- ing salt & chopped herbs. Whisk egg with 2 Tbsp water in third bowl. Pat tomatoes dry.
Coat slices with flour. then beaten egg & finally cornmeal. In heavy skillet cook tomatoes in oil (med. high) untilgolden on each side (3-5 min.). Drain on paper towels. Bake 5-10 min more, if necessary, to soften tomatoes. Sprinkle with crispy bacon.
Optional Spicy Aioli: In blender chop chilis & garlic. Add egg yolk & puree. Gradually stream in olive oil until it thickens like mayonaise. Season with salt, paprika, lemon juice and a pinch of cayenne pepper for spicier flavor. Store chilled until ready to serve.
