Tabbouleh with Fresh Vegetables
1¼ CupsBulghar Cracked Whea 3/4Cucumber, chopped
2 CupsWater/Broth, boiled 1/2 Cup ea.Mint/Parsley, choppe
3 Tbsp. ea.Olive Oil & Lemon ju 1/2 CupOnion, chopped
3/4 CupPlum Tomato, chopped 2 Tsp. ea.Garlic/Salt/Pepper,
Place cracked wheat in lg non-reactive bowl. Pour boiling wateror broth over wheat. Cover, set aside -wheat absorbs liquid.
Cool completely (1 hr). Add oil, lemon juice, mint, parsley, onion, garlic, salt & pepper to wheat & toss well with a fork.
Add minced tomatoes & cucumber. Let stand (or refrigerate) 1/2 hr or more before serving to bring out flavors. Serve on bed of greens or with cheese on french bread.
